Chocolate Chip & Peanut Butter Brownies


After a rather lengthy break from blogging, we are finally back!  


I actually made these yummy chocolate brownies way back in November last year when my sister Katie, aka Auntie Grubs, had a firework party for Guy Fawkes night.  There was much Oooohing and Ahhhhing over both fireworks and brownies! They went down a treat and received lots of compliments so I was really excited to write up my post, however…


…just a few days after the party I rapidly descended into a world where food was no longer something to be enjoyed, cooking became impossible and, apologies for writing the following on a food blog but, vomiting and nausea became my life!  

And the reason......


.....these two little people!  Yup, I'm pregnant with twins and (now that I’ve emerged from my cloud of nausea and sickness) unbelievably happy, very excited and a little bit scared all at once.  They are due in June so until then I will continue cooking for Oscar and the bump, which has given me the most enormous appetite, so expect some hearty dishes full of good stuff over the next few months.  I would imagine though that once June arrives this blog will be quiet for a while! 

It is so nice to feel normal again and to be able to think about cooking and food other than macaroni cheese, super noodles and peach yoghurt!!  So finally, here is my very belated recipe for chocolate chip & peanut butter brownies.

It is basically my Granny's original brownie recipe with some deliciously indulgent additions.



Granny’s recipe is in lb and oz so I have stuck to those here.
                              
4oz butter
10oz granulated sugar
2 eggs, beaten
6oz self-raising flour + 1 tsp for coating choc chips
2oz cocoa powder
4oz chocolate chips
16 tsp (approx) peanut butter



Heat the oven to 160°c (Gran’s recipe is for Gas mark 3-4)

Line a 22.5cm square tin with baking parchment and grease with a little butter or oil.  Alternatively grease the tin well with butter and dust with flour.

1. Melt the butter in a small saucepan and stir in the granulated sugar.  Turn off the heat.

2. In a bowl, mix together the flour, cocoa and eggs then add the butter and sugar mixture.  Stir well to combine.  The mixture will be quite firm.

3. Put the teaspoon of flour in a small bowl and mix in the chocolate chips to coat them, then mix the chocolate chips into the brownie mixture.

4. Tip the mixture into the tin and press it to the edges.  Dollop on teaspoons of peanut butter and swirl them around (use as much as you like – I measured out 16 squares and used approx 1 teaspoon for each).


5. Cook in the oven for 17-18 minutes, leaving the middle soft.

4. Remove from the oven and mark out the squares with a sharp knife whilst it is still warm.  Leave to cool completely in the tin, put it in the fridge to speed things up if you can’t wait!


5. Once it is cool cut into squares and enjoy.



Oscar really liked these although did eat around the peanut butter. Everyone else loved them - 4.5/5.
